CHÂTEAU CABRIÈRES

Château Cabrières' history is traceable
back to 1344. The chateau
itself was constructed in the heart of the vineyards.
Remnants of the
original rustic farmhouse have been found and preserved.
The vineyard is situated on the plateau and is extremely rocky. The
large
stones absorb the heat of the sun all day and reflect it back on
the vines
during the evening. This phenomenon produces grapes with
high natural sugar
content, accounting for the rich full-body, robust
wine. The vines are old,
between 40 and 90 years of age.
Château Cabrières, in the interest of the quality,
severely limits yield
an average of 20 hectoliters per hectare. The
mix of grape varieties is
typical of the region. Grenache predominates,
representing 50% of the
mix followed by Syrah, 15%; Mourvèdre,
10%; and Cinsault, 10%,
the 15% balance are four other varieties.
The various grape varieties
are harvested and vinified separately.
Then, a blending is done to
archive the maximum harmony of body,
flavor, and richness.
Château Cabrières produces a "Cuvee Prestige". This
limited-quantity
production, not made in every vintage, is the produce
of 90-year-old
vines. In addition, Château Cabrières produces
a small number of
cases of Châteauneuf-du-Pape Blanc.
